Stuffed eggs

Stuffed eggs, often called deviled eggs, are a classic appetizer that’s simple to make and can be customized in many ways. Here’s a basic recipe for making delicious stuffed eggs:

Ingredients:

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard (or regular mustard)
  • 1 teaspoon apple cider vinegar (optional)
  • Salt and pepper (to taste)
  • Paprika for garnish
  • Optional add-ins: chopped pickles, capers, fresh herbs (like chives or dill), or a dash of hot sauce

Instructions:

  1. Boil the eggs: Place the eggs in a pot and cover them with cold water. Bring to a boil, then reduce heat and simmer for about 9-12 minutes. Once done, transfer the eggs to an ice bath to cool. Once cooled, peel the eggs.

  2. Prepare the filling: Cut the eggs in half lengthwise and carefully remove the yolks. Place the yolks in a mixing bowl and mash them with a fork.

  3. Mix the filling: Add the mayonnaise, Dijon mustard, apple cider vinegar (if using), salt, and pepper to the mashed yolks. Mix until smooth and creamy. Taste and adjust seasoning as needed. If using optional add-ins, fold them in at this stage.

  4. Stuff the eggs: Use a spoon or a piping bag to fill the egg white halves with the yolk mixture.

  5. Garnish and serve: Sprinkle paprika on top for garnish. You can also add a small sprig of fresh herb for decoration.

  6. Chill (optional): For best flavor, refrigerate the stuffed eggs for about 30 minutes before serving.

Tips:

  • You can experiment with flavors by adding ingredients like bacon bits, Sriracha, or smoked paprika.
  • For a lighter version, you can substitute Greek yogurt for some or all of the mayonnaise.
